Serves 2
Ingredients:
• 1 tablespoon Extra Virgin Olive Oil
• 1 whole Branzino (per person), scaled and cleaned (head & tail left intact)
• 6 fresh Marjoram Sprigs
• 4 thin Lemon slices, halved
• 1 cup dry White Wine
• 1 cup Fish Stock
• Sea Salt


Method:

1. Preheat oven to 400°F.
2. Sprinkle Branzino inside and out with Salt. Stuff cavity with Marjoram Sprigs and Lemon slices. Arrange Fish in baking dish. Pour in Wine, 1 cup Stock. Drizzle with 11 tablespoons Oil.
3. Roast Fish 15 to20 minutes. Remove from oven. Sprinkle with Sea Salt.
Let Fish rest about 5-8 minutes before serving.
4. Serve immediately
