Serves 4
Ingredients:
• 2 (12) oz jars Piquillo Peppers
• 5 oz Goat Cheese
• 3Tbs. Extra Virgin Olive Oil
• 1 Clove Garlic, finely chopped
• 1 Pinch Sea Salt
• 1 Lb. Fresh Spinach roughly chopped


Method:

1. Preheat oven to broil
2. Wilt spinach in hot pan with Olive Oil, Garlic, and Salt. - set aside and cool
3. Crumble Goat Cheese into Spinach and fold gently
4. Gently open stem of Peppers
5. Carefully stuff 1-1 tsp Goat Cheese inside each Pepper
6. Placed in a baking dish, glazed with Extra Virgin Olive Oil
7. Broil 7-10 minutes or until Cheese is soft and Peppers are heated through
8. Serve and Enjoy!
