Serves 2-3
Ingredients:
• A pinch of Saffron threads
• 2 cups Broth (Chicken or Fish)
• 1 cup Long-Grain White Rice
• 1/3 cup Golden Raisins
• 1 Carrot, cut in julienne strips
• 1 tablespoon Unsalted Butter
• 1/2 medium Onion, finely chopped
• 1 cup toasted Slivered Almonds
Method:
1. In a medium saucepan, sauté Rice, Raisins, Carrots & Onion in Butter or Olive Oil, then add Saffron and Rice
and cook for about 2 minutes.
2. Add hot Broth and bring to a boil.
3. Reduce heat. Cover and simmer until Rice is tender and liquid is absorbed,
15 to 20 minutes.
4. Remove cover, fluff with a fork and fold in toasted Almonds.
5. Serve and Enjoy!
