Serves 3-4
Ingredients:
• 1 lb Plum Tomatoes, blanched, peeled & seeded
• 1 lb Fava Beans
• Honey
• White Balsamic Vinegar
• Chives, chopped fine
• 1 lb Shrimp, peeled & deveined
• 1 lb Scallops
Method:
1. Season Shrimp and Scallops and sear in hot pan with Olive Oil
2. Steam Fava Beans
3. Dice Tomatoes
4. Cut Shrimp in 4ths and quarter Scallops
5. Combine Tomatoes, Beans, Shrimp and Scallops in large bowl
6. Add Honey and Vinegar to taste
7. Season with Salt and Pepper
8. Toss lightly and garnish with Chives
9. Serve immediately |
