Serves 3-4
Ingredients:
• 3 Garlic cloves, minced
• 3 teaspoons Extra Virgin Olive Oil
• 6 green stalks of Scallions, cut into 1-inch pieces
• 1 medium Red Onion, Julienne cut
• 1 pound Zucchini, diced
• 1 pound Yellow Squash, diced
• 1 cup Fish or Chicken Stock
• 1 pint small Cherry Tomatoes, halved
• 1 teaspoon Tarragon
• Salt and freshly Ground Pepper to taste
• 1 tablespoon Capers
• 1/2 cup spanish olives
• 1 teaspoon Smoked Paprika
Method:
1. In a heavy 12-inch skillet sauté Garlic, Onions, and scallions until carmelized. Add Zucchini
and Yellow Squash and cook for another 6 minutes.
2. Add Stock, Tomatoes, Olives & Capers,smoked Paprika and simmer covered 5-8 minutes or until
vegetables are tender.
3. Season with Salt & Pepper to taste.
4. Serve and Enjoy! |
