Serves 4
Ingredients:
• 1 lb Baby Carrots
• 1 lb Baby Potatoes, halved with skin on
• 2 C Zucchini, cut into ¾” slices
• I Red Bell Pepper, seeded and sliced
• 1 Onion, sliced
• 2 cloves Garlic, diced
• Fresh Tarragon to taste, chopped
• 2 Lbs Grouper filet, cut in 4 pieces
• 1 C White wine
• ½ C Vegetable stock
• ½ C Vegetable stock
• ¾ C Olive oil
• Juice of 1 Lemon (reserve Lemon)



Method:

1. Preheat oven to 350?

2. Season Grouper with Salt & Pepper

3. Mix White wine, Garlic, Stock, Olive oil, Salt, Pepper and Tarragon together in bowl and combine well. Brush dressing on both sides of Grouper and set aside.

4. Place Carrots, Potatoes, Zucchini, Bell Pepper and Onion in large plastic bag. Pour ¾ of the dressing into the bag and secure. Shake bag until all of the vegetables are completely covered. Place vegetables into baking dish. Place Grouper filets into baking dish surrounded by vegetables. Pour remaining dressing over fish. Squeeze lemon juice over fish then quarter Lemon and place slices on top of fish.

5. Cover with foil and bake for about 45 minutes or until vegetables are done.

Serve immediately
